How to store cheese
Keep cheese cold, at or below 40°F (4°C). Don’t leave it out of refrigeration for more than 2 hours, or 1 hour above 90°F (32°C).
Unopened hard cheese keeps 6 months in the refrigerator but only 3 to 4 weeks once opened. After cutting away mold, re-cover the cheese in fresh wrap.
How long can cream cheese sit out?
Cream cheese can sit out for no more than 2 hours, or 1 hour when the temperature is above 90°F (32°C). So don’t leave it on the counter overnight.
The same limit applies to cottage cheese and other soft, perishable cheese. Bacteria grow most rapidly between 40°F (4°C) and 140°F (60°C), doubling in number in as little as 20 minutes. The USDA explains why in its guide to the Danger Zone.
Can you cut mold off cheese?
Only off hard cheese. Soft, shredded, crumbled, and sliced cheese goes in the trash.
Hard cheese
Cut off at least 1 inch (2.5 cm) around and below the mold spot. Keep the knife out of the mold so it doesn’t spread, then re-cover the cheese in fresh wrap.
Mold generally can’t penetrate deep into hard cheese. This applies to cheese where mold isn’t part of how it’s made.
Blue cheese, Brie, and Camembert
Roquefort, blue cheese, Gorgonzola, Stilton, Brie, and Camembert are made with mold. Discard soft ones such as Brie and Camembert if they have mold that isn’t part of how they are made.
On hard ones such as Gorgonzola and Stilton, cut off at least 1 inch (2.5 cm) around and below the spot and treat them like hard cheese.
Soft, shredded, and sliced cheese
Throw out moldy soft cheese such as cottage cheese, cream cheese, Neufchatel, chevre, and Bel Paese. Do the same with moldy crumbled, shredded, or sliced cheese of any type.
High-moisture food can be contaminated below the surface, and cut cheese can be contaminated by the knife. Moldy soft cheese can also have bacteria growing along with the mold.
